THE best Mac n (vegan) Cheese Recipe!

Just for you - here it is! I promised that I would start posting great dinner recipes, so I thought I'd start off with a BANG! This recipe is quick, easy, satisfying, healthy, and delicious!
2 Tbs. Earth Balance
1 small onion, finely diced
3 cloves of garlic
1/3 C Nutritional Yeast
3/4 C raw cashews
1-2 C pasta water
1 teaspoon Mustard
1/4 teaspoon turmeric, optional (just for yellow color!)
Cook 1 bag of whole wheat macaroni or penne pasta according to the instructions on the bag. Save 1-2 cups of the pasta water for the cheese recipe!
Melt earth balance in a large skillet over med high heat. Add onions and cook until soft. Put the melted butter and soft onions in a blender, along with the garlic, nutritional yeast, cashews, pasta water (add 1 cup and then more as needed), mustard, and turmeric. Blend until super silky smooth!
Drain pasta and pour into the large skillet. Pour cheese sauce over pasta, add salt and pepper to taste. Enjoy!!
